    Add opt-in persistent storage for stateful gRPC payment processor sidecars, including mints whose ledger uses PostgreSQL (PR #38).

    Set mint.cashu.asmogo.github.io/persist-processor-data: "true" on a CashuMint with an enabled processor sidecar to use its data PVC, select Recreate and reject more than one replica. Existing behavior is unchanged without the annotation; no CRD schema change is required.

    Existing installations must preserve and restore their processor data before enabling the annotation. This release does not copy files or convert database formats. Recreate prevents overlap during normal deployment updates, not force deletion or independently started wallet instances.

    Includes regression tests and documentation. See PR #38 for validation. Publishing this release does not activate the feature on any mint.
